Khandeshi Recipes - Maharastrian Regional Cuisine - Indian Food ...

Khandeshi Recipes

Today we have Minoti (aka Mints) of Vadani Kaval Gheta share her insight into Khandeshi (a regional cuisine of Maharashtra) food culture. Vadani Kaval Gheta is run by Minoti, an Indian food blogger based in the US. Do visit Minoti?s lovely food blog which focuses on the age old customs and food traditions of the Maharashtrian people. She blogs primarily about vegetarian and vegan cooking and her blog is a treasure house of traditional Maharashtrian cuisine. Thank you, Minoti, for taking time to share with us your regional food cuisine! Dear readers, please give a warm welcome to Minoti.

I am fortunate to have married a wonderful person who is a proud and good cook from Khandesh. Khandesh is near Bhusawal railway junction consisting of Jalgaon, Dhule and Nandurbar districts in Maharashtra. Two different dialects of Marathi kalled Khandeshi and Ahirani are the spoken languages of this region. There is a saying in Marathi ?Language changes every 10 miles?; I want to adapt that to say ?Cooking style changes every 10 miles? too.

Until I went to my in-law?s place, I did not have much idea about Khandeshi food except a sabji here and a chutney there. I fell in love with the cuisine at the first bite! It was very different to what I was used to eating and cooking. I started learning to cook those recipes from my mother-in-law, sister-in-law, husband and even my father-in-law. There were times I would make phone calls to India to ask details about a recipe. Even now I call to check and clarify various recipes with them.

All regions of India generally serve four types of thalis ? breakfast thali, everyday lunch thali, every day dinner thali and festival special thalis and Khandesh is no different than the others. Today I am going to share some vegetarian thalis and Khandeshi recipes.

Breakfast thali is not an everyday affair but is served mostly on weekends. Like other Maharashtrian households pohe, upma, left over bread bhaji are made regularly. Mugache dhirade (moong cheela), is moong daal flour mixed with ginger-garlic paste and made into small crepes. Jowar crepes is another traditional breakfast dish. Here?s a picture of Moong dhirade/chila

Dhirade (Moong Cheela)

Another favorite breakfast dish is Methiche parathe and chutney. These are very different from Punjabi style Methi Paratha and Gujarati style Methi Thepala.

Everyday lunch thali is served in a stainless steel plate called taaT/thali. Chapati/wheat roti or Jowar/Sorghum roti is a must. Curry like subji served in a small steel bowl usually in the center of the plate. Chutneys, pickles, salads served on the left side and dry subji on the right hand side. Here is a picture of a simple Khandeshi thali ?

Typical Khandeshi Thali

Khandeshis love subjis with gravy. Gravies are made with daals and peanuts. These gravies taste very different from the tomato based gravies. Green tomato bhaji with peanut gravy, fenugreek bhaji with peanut gravy are staples. Sometimes pumpkin sabji also takes the center stage. Daal Gandori is another of Khandesh favorite sabji. It is made with green sorrel leaves and green chilies. There are seasonal vegetables like Ghol (Purslane), Chival (very similar to purslane but is bit sour and has smaller leaves.) Stuffed eggplants also appear regularly on the lunch plate. Dry moong daal fry is made when there are no fresh vegetables in the market. Ridge gourd sabji, stuffed baby bitter gourds, Bhindi/Okra sabji are some other vegetables made regularly. Sprouted moong, moth beans are made during summer and rainy season when farmers cannot grow vegetables.

Few chutneys like Green chutney(recipe follows), Nistyachi Chutney make a regular appearance in daily meals. Dry peanut chutney is also staple and easy to make. It is a must for dinner.

Everyday dinner thali is as simple as it can get. Rice-daal khichadi, dry peanut chutney with oil and some leftovers from the morning meal. Khandeshi people love their khichadi.

It is very simple to make ? 2 parts rice, 1 part mung daal or toor daal cooked with 2-3 parts water with pinch of turmeric and salt to taste. This khichadi is made over the stove top on low heat. They do not like their kichadi to be mushy so it is never made in pressure cooker. Here is how the everyday dinner thali looks ?

Simple Khandeshi style dinner

Lets see some Khandeshi special thalis ?

1. Wedding Thali: One might think the wedding thali must be very elaborate and will showcase something special for the occasion. In Khandesh, wedding invitations go out to almost everyone you know so wedding thali is kept very simple. Chapatis are made a day earlier so can be crumbled easily on the wedding day. One or two chapatis are served per person to crumble. Then make a well with these crumbles, to use as a bowl for plain daal called varan with little bit of ghee/toop. Then everything is mixed and eaten with eggplant bhaji.
2. Shev-Bhaji: Red spicy curry made with bhavnagari gathia. It is served as lunch with chapati. Onion slices and lemon are must accompaniments. Some restaurants do serve it but it is also made at home fairly regularly.
3. Vangyache Bharit (Khandesh style baingan Bharata) and Puri: Khandeshis love their eggplants in any form, so much so that even mentioning this name to Khandeshis make them want to have it right away even after full stomach. I have tried to capture photo feature of the whole process of making Khandeshi special Baingan Bharta.
4. Vafole/muthe/bhendake with kadhi: Steamed toor daal dumplings with kadhi. Buttermilk kadhi is made in earthen pot and tempered using chili-garlic-ginger paste and lichen over live fire.
5. Batti-varan: It is very similar to daal baati of Rajasthan but still very different. Battis are roasted on coal fire. It is enjoyed with simple accompaniments like Amsool Kadhi and Eggplant Bhaji.
6. Upavasachi Thali (Religious fasting thali): Sabudana Khichadi, fried sago/sabudana chakali, sabudana papad adorn the thali. But speciality of Khandesh is Raw Banana Roti with yogurt. Pancakes made with raw banana flour + Amaranth flour and some potatoes make special appearance in fasting thali.

Today, I am going to share a special bread/roti called Bhakari it is made all over Maharashtra including Khandesh. Bhakari is usually made with Jowar/Sorghum flour but Khandeshis make special bhakari called KaLaNyachi Bhakari. It is accompanied by Nistyachi Chutney (red chutney), green chutney(recipe follows), dried gongura bhaji, papadacha Khula, palebhajicha khula (recipe follows) and plain white rice and varan.

Here is how the thali looks ?

Kalanyachi Bhakari Chutney

KaLaNyachi Bhakari:

KaLaNa flour is made by grinding 5 parts Jowar/Sorghum, 1 part whole Urad and salt. Sometimes fenugreek seeds are added to the mix to give it a different flavor. We do not have flour mills in US so I get some from India or I mix store bought jowar/sorghum flour and store bought urad daal flour in the same proportions(5:1), add pinch of salt and mix well. If I have fenugreek/methi flour I add teaspoon to the mix.

Let us move on to making bhakri. Making bhakari needs a little skill but is not difficult. Here is the video I made to share the whole process with all of you ?

Note: The video is for simple sorghum/jowar bhakari. The only change for KaLaNa bhakari is use of tap water instead of boiling water to knead the dough. These bhakaris are best when you enjoy them with Green Chutney with Peanuts! Here is how the green chutney is made:

Green Chutney Recipe:

This is the most favorite accompaniment with KaLaNyachi Bhakari in our household. This is again showcases Maharashtrian?s favorite nutty legumes ? Peanuts! Lightly roasted peanuts give it a creamy texture.

1 cup Peanuts (not roasted)
6-8 Green Chilies (per taste)
3-4 Cloves of Garlic
2-3 cups Cilantro
1? blob Ginger
Salt per taste
Water as needed
For Tempering ? 2-3 tbsp Oil, 1 tsp Cumin Seeds, 10-12 Curry Leaves, Pinch of Hing

Preparation -

Lightly roast peanuts and set aside.
Lightly roast green chilies and cloves.
Coarsely chop cilantro and ginger.
Let everything cool down for 5-10 minutes
Add roasted peanuts, roasted garlic and chilies, chopped ginger and cilantro to wet grinder. Add salt and little water.
Grind into fine paste using little water at a time. This is not a very dry chutney but not liquidy either. Adjust salt if needed.
Heat oil in a small kadhai, add cumin seeds and curry leaves. Let it sizzle for a minute, then add hing. Mix together and pour chutney. Serve in a small bowl and add about ? tbsp oil and enjoy with KaLaNa bhakari.

Another simple accompaniment is chopped green salad called Khuda. All the available greens are chopped together to make this. Here is how they make it at our place ?

Palebhajicha Khuda Recipe (Chopped green vegetable salad)

Mix together chopped fenugreek/methi leaves, green sorrel leaves, tender radish leaves, chopped tomatoes, salt, oil, red chili powder. Squeeze lime juice and mix. Serve as side dish or salad.

Regional food is very hard to capture in one small article and I am not claiming that I have covered everything here. My knowledge of Khandeshi food is fairly recent and I am still learning and getting to know. I learn something new in every India trip and try to replicate that in my kitchen here. I hope you enjoyed reading and will enjoy making these traditional recipes as much as I do.

Thank you Sailu for giving me opportunity to write for such a popular traditional thali series, Indian food trail.

Indian Food Trail ~ Khandeshi Cuisine Recipe

Prep time: 15 min

Cook time: 10 min

Yield: 3

Main Ingredients:

Ingredients

  • Jowar Flour - 1 1/4 cup
  • Urad dal flour - 1/4 cup
  • Methi powder - 1 tsp (fenugreek powder) optional
  • Salt - 1/2 tsp (or as per taste
  • Water as needed

Method

  1. Start heating a flat griddle on low to medium heat.
  2. Take a wide plate, create a well with flour and add about ? cup of water in the center of that well. Now carefully start making dough by adding very little water at a time. Once dough is formed, start kneading, use little water at a time. Jowar is gluten free grain so we have to knead to create some stickiness. Jowar dough never springs back when pushed with finger.
  3. Divide dough into four equal size balls. Sprinkle dry jowar flour on flat surface like chopping board. Put the dough ball with flat side down on floured surface. Start patting it gently and keep moving it to make roti. If needed sprinkle more dry flour underneath the roti so it will not stick to the surface. Make about 6-7? diameter bhakari (minimum).
  4. Carefully put the bhakari on griddle upside down. Now apply water to the roti with small piece of cloth. Let the water dry a little bit. Gently flip the roti and let it cook from the other side. Once the roti is cooked, it slides easily from the griddle. It is now puffed over the flame like Phulka. You can also puff it on the griddle by flipping it one more time. Cook it thoroughly from the other side. Repeat same process for remaining bhakaris. One cup of flour should yield 3-4 bhakaris depending on the size.
  5. These bhakaris are best enjoyed with Green Chutney with Peanuts.

Tips

  • Methi powder is optional.

Twinkies maker Hostess ready for its big bake sale

(AP) ? The future of Twinkies is virtually assured.

Hostess Brands Inc. got final approval for its wind-down plans in bankruptcy court Thursday, setting the stage for its iconic snack cakes to find a second life with new owners ? even as 18,000 jobs will be wiped out.

The company said in court that it's in talks with 110 potential buyers for its brands, which include CupCakes, Ding Dongs and Ho Hos. The suitors include at least five national retailers such as supermarkets, a financial adviser for Hostess said. The process has been "so fast and furious" Hostess wasn't able to make its planned calls to potential buyers, said Joshua Scherer of Perella Weinberg Partners.

"Not only are these buyers serious, but they are expecting to spend substantial sums," he said, noting that six of them had hired investment banks to help in the process.

The update on the sale process came as Hostess also received approval to give its top executives bonuses totaling up to $1.8 million for meeting certain budget goals during the liquidation. The company says the incentive pay is needed to retain the 19 corporate officers and "high-level managers" for the wind down process, which could take about a year.

Two of those executives would be eligible for additional rewards depending on how efficiently they carry out the liquidation. The compensation would be on top of their regular pay.

The bonuses do not include pay for CEO Gregory Rayburn, who was brought on as a restructuring expert earlier this year. Rayburn is being paid $125,000 a month.

Hostess was given interim approval for its wind-down last week, which gave the company the legal protection to immediately fire 15,000 union workers. The company said the terminations were necessary to free up workers to apply for unemployment benefits. About 3,200 employees are being retained to help in winding down operations, including 237 employees at the corporate level.

The bakers union, Hostess' second-largest union, has asked the judge to appoint an independent trustee to oversee the liquidation, saying that the current management "has been woefully unsuccessful in its reorganization attempts."

Hostess had already said last week that it was getting a flood of interest from potential buyers for its brands, which also include Devil Dogs and Wonder bread. The company has stressed it needs to move quickly to capitalize on the outpouring of nostalgia sparked by its liquidation.

"The longer these brands are off the shelves, the less they're going to be valued," Scherer said Thursday in U.S. Bankruptcy Court in the Southern District of New York in White Plains, N.Y.

Last week, Scherer had noted that it was a "once-in-a-lifetime opportunity" for buyers to snap up such well-known products without the debt and labor contracts that would come with the purchasing the entire company. Although Hostess sales have been declining over the years, they still clock in at between $2.3 billion and $2.4 billion a year.

Scherer also said a surprising number of potential buyers have expressed interest in most of its three dozen factories.

The company's demise came after years of management turmoil and turnover, with workers saying the company failed to invest in updating its products. In January, Hostess filed for its second Chapter 11 bankruptcy in less than a decade, citing steep costs associated with its unionized workforce.

Although Hostess was able to reach a new contract agreement with its largest union, the Teamsters, the bakers union rejected the terms and went on strike Nov. 9. Hostess announced its plans to liquidate a week later, saying the strike crippled its ability to maintain normal production.

In court Thursday, an attorney for Hostess noted that the company is no longer able to pay retiree benefits, which come to about $1.1 million a month. Hostess stopped contributing to its union pension plans more than a year ago.

Toward the end of the hearing, a man who said he'd worked for Hostess for 34 years stood to give his objections to the wind-down plan, saying creditors shouldn't be paid when the company hasn't been making its contributions to workers' pension funds.

"I have traveled pretty far to get here," he said, noting that many of his co-workers didn't know how to get to the hearing and speak for themselves. "I just wanted to be heard."

2012 LA Auto Show: Volkswagen Jetta Hybrid

Volkswagen of America has revealed the full production version of the new Volkswagen Jetta Hybrid at the 2012 LA Auto Show.

Volkswagen of America has revealed the full production version of the Volkswagen Jetta Hybrid at the 2012 LA Auto Show.

The new Jetta Hybrid, greenest addition to the Jetta range, is powered by a 1.4-liter 110 kW/148 hp turbocharged gasoline engine and a 20 kW electric motor, together with a seven-speed DSG gearbox.

This makes for fuel consumption that is around 20 per cent better overall than an equivalent gasoline-powered vehicle (at 45 mpg US ? around 54 mpg Imperial), and also sporty performance, with the benchmark zero to 60 mph sprint taking less than nine seconds.

Like the Touareg Hybrid, the Jetta is a parallel hybrid, which uses a decoupling clutch that can disengage the gasoline motor for pure electric drive (or when coasting or braking), disengage the electric motor (for higher speeds or when the battery charge is low), or combine the two units for maximum power.? Using electric power alone, the Jetta Hybrid can be driven at speeds of up to 70 kmh (44 mph) and over a distance of two kilometres (1.3 miles), depending on conditions.? For maximum performance, both the TSI engine and the electric motor combine, giving peak power of 170 68.? This is the first use of the 1.4-liter turbocharged engine in America, and it offers the same power and more torque (250 Nm, 184 lbs ft) than the normally aspirated 2.5-liter engine that is commonly used in the Jetta in the US.

A lithium-ion battery supplies the energy for the electric motor.? It is located behind the rear seat bench, making no compromises on interior space.? The battery is made up of 60 individual cells, each with an energy capacity of 5 Ah.? Together they produce a nominal voltage of 220 Volts and an energy capacity of 1.1 kWh and weigh 38.5 kg.? Cooling is provided by an integrated fan, operated by the battery?s own management system that performs diagnostic, monitoring and safety functions, including disconnecting the battery in the event of an accident.

Despite the extra weight of the battery, electric motor and additional safety modifications to the vehicle?s structure, the Jetta Hybrid weighs only 100 kg more than the non-hybrid Jetta at less than 1,500 kg in total.

Provided the battery contains sufficient charge, the Jetta Hybrid is switched to electric drive mode either automatically (at speeds of up to 60 kmh or 37 mph) or at the press of a button next to the gear lever (up to 70 kmh or 44 mph).

When the driver releases the accelerator pedal at higher speeds (up to 135 kmh or 84 mph) the TSI engine is decoupled, reducing drag torque losses, and maximising fuel efficiency.? Under braking, the Jetta Hybrid switches to a battery regeneration mode, which decouples the TSI engine and uses the electric motor as a generator.? The generating power of the motor rises with increased brake pedal travel.? At higher speeds, or when the battery charge is depleted, the TSI motor provides extra power to recharge the battery, however even in these situations the charging is interspersed with electric driving phases to maximise fuel efficiency.

Externally, the Jetta Hybrid can be identified by aerodynamic modifications including a new front spoiler, a rear diffuser and a rear spoiler that help to improve the car?s Cd value by 10 per cent.? There are also new headlights with LED running lights, LED rear lights and unique 15-inch alloy wheels with low rolling resistance tyres.? ?Hybrid? badges adorn the front wings, bootlid and modified front grille, where the Volkswagen logo is presented on a blue background for the first time.

The interior of the Hybrid is very much like that of any other Jetta, although the electric drive, along with a newly designed exhaust system, an acoustic windscreen and thicker front side windows helps to make this the quietest vehicle Volkswagen has ever offered in this class.

One key interior difference is in the instruments.? If the driver selects the ?Hybrid? menu in the multifunction display, the current drive mode is shown, while a meter indicates energy flow via arrows.? The same screen also shows the battery charge state.? Beneath the energy flow diagram is what is known as the ePower meter, which indicates the power provided by the electric motor.

The tachometer is replaced by the Power meter, a multifunction display on the left of the instrument cluster.? This informs the driver of the operation of the hybrid system: ?Ready?, ?Charge?, ?Eco?, ?Boost? or ?TSI?.? The audio system, meanwhile, has a ?zero emissions? menu.? This offers a graphical display of the past 30 minutes of driving time, with a bar showing emissions each minute: a full, 100 percent bar represents no emissions at all.

Standard equipment on the US-spec SE model includes a 2Zone climate control system
that works without the TSI engine running, a ?Premium 8? sound system, Bluetooth phone integration, MDI interface for iPod connectivity and a leather-wrapped multifunction steering wheel.? Moving up to SEL1 specification adds 16-inch alloy wheels, a glass sunroof, RNS 315 satellite navigation, electric driver?s seat adjustment, heated front seats and keyless entry.? The top SEL2 specification adds to this further, with 17-inch wheels, fog lights, bi-xenon headlights with cornering function, a reversing camera and a 400-Watt Fender sound system.

'Moonrise,' 'Silver Linings' lead Spirit Awards

(AP) ? The oddball romances "Moonrise Kingdom" and "Silver Linings Playbook" picked up five nominations each Tuesday to lead the Spirit Awards honoring independent film.

Both films are competing for the best-picture prize at the Spirit Awards, one of Hollywood's first big announcements on the long road to the Oscars.

Also competing for best picture are the father-daughter tale "Beasts of the Southern Wild"; the black comedy "Bernie"; and the gay drama "Keep the Lights On."

"Silver Linings Playbook," a comic drama centered on a man just released from a mental hospital and a troubled young widow, earned lead-acting nominations for Bradley Cooper and Jennifer Lawrence. "Moonrise Kingdom," a first-love story between a precocious boy and girl who run away together, received a supporting-actor nomination for Bruce Willis.

The films each earned directing and screenplay slots for "Moonrise Kingdom" filmmaker Wes Anderson, who co-wrote the script with Roman Coppola, and "Silver Linings Playbook" filmmaker David O. Russell. "Moonrise Kingdom" also was nominated for cinematography.

Matthew McConaughey received two nominations, for best actor in "Killer Joe" and supporting actor in "Magic Mike." Past Academy Award winner Helen Hunt has a supporting-actress nomination for "The Sessions." Child star Quvenzhane Wallis, who had never acted before, has a best-actress nomination for "Beasts of the Southern Wild."

Among other acting nominees are Jack Black (best actor for "Bernie"); John Hawkes (best actor for "The Sessions"); Rosemarie DeWitt (supporting actress for "Your Sister's Sister"); Michael Pena (supporting actor for "End of Watch"); Sam Rockwell (supporting actor for "Seven Psychopaths"); and Mary Elizabeth Winstead (best actress for "Smashed").

Joining Anderson and Russell in the directing category are Julia Loktev for "The Loneliest Planet," Ira Sachs for "Keep the Lights On" and Benh Zeitlin for "Beasts of the Southern Wild," which won the top prize at last January's Sundance Film Festival.

Though the Spirit Awards honor lower-budgeted film outside the Hollywood mainstream, the nominations often overlap heavily with Oscar contenders. Last season's big Oscar winner, "The Artist," also won the top prize at the Spirit Awards, while films such as "The Descendants," ''Beginners" and "My Week with Marilyn" had wins or nominations at both shows.

The overlap may be lighter this season, with big-budget studio films such as "Les Miserables," ''Lincoln" and "Argo" shaping up as early favorites to dominate the Oscars, whose nominations come out Jan. 10.

But "Silver Linings Playbook," ''Moonrise Kingdom," ''Beasts of the Southern Wild," ''The Sessions" and other smaller films have solid prospects in some Oscar categories.

Presented by the cinema group Film Independent, the Spirit Awards will be handed out at an afternoon ceremony along the beach in Santa Monica, Calif., on Feb. 23, the day before the Oscars. The Spirit Awards show will air that night on IFC.

Nominees are chosen by panels of film professionals, which gauge contenders on such criteria as uniqueness of vision; original, provocative subject matter; how economically they were produced; and percentage of financing from independent, non-Hollywood sources. Eligible films typically range from tiny-budgeted movies shot for $500,000 or less to productions that cost as much as $20 million.

Members of Film Independent, including filmmakers and movie fans, are eligible to vote on the winners.

Battling for life, freedom and independence after cancer | The ...

Like many who wage battle, Zach Graas fights for freedom and independence.

But his battlefield is empty hospital hallways and the hollow, piercing sound of an MRI machine. His enemy: the dozens of pills he swallows daily.

Zach has one word to describe the cancer that has invaded his 19-year-old brain: ?frustrating.?

His fight started last September during his freshman year at the University. In the shower, his right hand went numb. The numbness persisted; Zach stumbled to his bed.

?I just thought, ?Shit, this is not okay?,? Zach said.

After an overnight trip to Lawrence Memorial Hospital, a CT scan and an MRI, Zach knew he had a partial simple seizure, but he would not learn he had fibrillary astrocytoma, a series of brain tumors, until a month later.

?My mom told me,? Zach said. ?She was crying, so I knew it was cancer. I felt disappointed. It was literally the worst possible outcome.?

From there, doctors wheeled him in for surgery; then a year full of chemotherapy and pills began. He took five chemo pills every 23 days for 12 months, in addition to nearly 12 seizure-prevention pills every day.

Zach said chemo wasn?t so bad. Despite feeling tired and nauseous, it was the surgeries and MRI scans that got him at first.

?I remember being little and thinking the brain was just the scariest thing,? Zach said. ?We saw pictures of the MRI machines in school, and I was so freaked out.?

Listening to Tupac during MRIs helped, but Zach said the best remedy is a change in mindset.

?I was really reckless before, and carelessly free,? Zach said, recalling a time he sped his Mustang into a tree. ?Now it?s about wanting everyday, and wanting to make it better than the one before.?

Eventually his right hand became worse, he writes and types with three fingers.

A recent MRI showed he needs a tumor resection surgery, in which surgeons will try and remove the cancerous cells while restoring the movement back to his right hand, which he can?t lie flat. To perform the surgery, doctors need Zach to be awake so he can move his right arm. That way, Zach says, they won?t get any of the good cells.

When he found out the chemo did not completely destroy the tumors, his family accompanied him to the MRI, and so did Rachel Forrest, a friend and junior from Edmond, OK.

When the results showed the cancer was not gone, Rachel wanted to use her skills to help. A painting and art history major, Rachel began organizing an auction to raise money.

?I don?t like to think about the numbers,? Zach said. ?I know my prescriptions alone are in the thousands.?

In addition to the co-pays, and the flight Zach and his family will have to make to the University of California, San Francisco for his December surgery.

Zach helped Rachel move over the summer, despite the heat and not having complete use of his right hand.

?I couldn?t have done that on my own,? Rachel said. ?He?s helped for nothing, so I wanted to help.?

The silent auction will be part of Final Fridays in the Alton Ballroom at Pachamama?s, 800 New Hampshire St., from 5 to 9 p.m.

More than 30 pieces of art have been donated from University students, graduates, faculty and other artists in the community.

Rachel expects to be anxious the day of Zach?s surgery as she awaits word from his mother.

?I know I?ll be nervous,? Rachel said. ?It helps that Zach is so chill about it.?

If the surgery goes well, Zach hopes his battle will be over, and he will eventually throw away the pill bottles that surround him, though the MRI machine will be a familiar former-foe in the months following.

?I want to be independent again,? Zach said. ?It?s annoying to be so dependent on the medicine, the doctors and to need my brother around just in case.?

Natural Does Not Mean Safe

This past October, the office of the inspector general of the Department of Health and Human Services issued two reports underscoring the need for improved oversight of the marketing of dietary supplements and improved surveillance of their effects. The reports add to a mounting body of evidence documenting a serious public-health problem.

Use of dietary and herbal supplements has grown dramatically in recent years in the United States. In 2007, according to the National Center for Complementary and Alternative Medicine, $14.8 billion was spent on nonvitamin, nonmineral, natural products, such as fish oil, glucosamine, and Echinacea?equivalent to approximately one-third of total out-of-pocket spending on prescription drugs. Of that total, $4.4 billion was spent on herbal supplements. Data from the National Health and Nutrition Survey for 2003 to 2006 indicate that one-half of American adults use dietary supplements and 20 percent use a supplement with at least one botanical ingredient.

Many people think that because herbs are natural, and because they are being marketed and sold legally, they must be safe and effective. Furthermore, surveys of the public indicate that most people believe these products are regulated by the U.S. Food and Drug Administration. In fact, both assumptions are mistaken.?

In 1994, Congress passed the Dietary Supplement Health and Education Act, with heavy backing from the dietary supplements industry. By defining herbal supplements and botanicals as dietary supplements, DSHEA exempted them from the more rigorous standards used by the FDA in regulating food, drugs, and medical devices?essentially leaving it up to the industry to regulate itself. This single piece of legislation opened the floodgates to a rapid expansion in the sale of dietary supplements.

Between 1994 and 2008, the number of dietary supplement products on the market increased from 4,000 to 75,000. In the first 10 months of 2008, the FDA received nearly 600 reports of serious adverse events (including hospitalization, disability, and death) from these products and 350 reports of moderate or mild adverse events. However, the FDA believes that these reports are drastically underreported and estimates that the annual number of all adverse events is 50,000.

Two highly-respected physician-scientists, Donald Marcus of Baylor College of Medicine and Arthur Grollman of Stony Brook University, have been drawing attention to the dangers of herbal supplements for more than a decade. In a recent article in the Archives of Internal Medicine, they noted, ?Even when the agency [FDA] identifies an unsafe product, it lacks authority to mandate its removal from the market because it must meet the very high legal requirement to demonstrate a ?significant or unreasonable? risk. That is why it took FDA more than 10 years to remove from the market ephedra-containing herbal weight-loss products that had caused hundreds of deaths and thousands of adverse events.?
